Sep.16th is Mexico's independence Day. In Mexico there is s special dish to celebrate this honorable day."CHILE EN NOGADA"is the one. Large green poblanochili is stuffed with "picadillo" of minced pork,apple,pear,peach,raisin, and almond, then covered with the sauce with walnut, cheese,and cream.Finally, spinkled with flat leaf parsley and pommergranate seeds to look like Mexican flag.
Like the other national dish, "MOLE", this one is said to be invented by nuns of a convent in the city of Puebla, in honor of Don Iturbide who realized the independence of Mexico.
